Chocolate Chip Cookies

This cookie recipe has become something sacred in the Emerick household. It is the perfect recipe to whip out when you’re told to just bring yourself to an event (as if). Bake at your own risk, they’re bloody moreish.

Prep time: 10 mins | Cook time: 15 mins | Total time: 25 mins | Serves: 8

Ingredients:

8 tablespoons of butter (113g/4oz)

½ cup of white or granulated sugar

¼ cup light brown sugar (packed)

1 teaspoon of vanilla

1 egg

1 + ½ cups plain flour

½ tsp baking soda

¼ teaspoon of salt

1-1½ cup of chocolate chips (or, measure with your heart)

Method:

  1. Preheat oven to 180°C (350°F) and line a large tray with baking paper.

  2. Microwave butter in 30 second intervals until soft (not completely melted).

  3. Using a whisk, hand mixer or standing mixer, cream butter and sugars together.

  4. Add vanilla and then mix the eggs in one at at time. If using standing mixer or hand mixer, use the lowest setting so that the eggs are just combined. Over-beating at this stage will make stiff cookies.

  5. Using a spatula, add the flour, baking soda and salt to the wet ingredients. Combine into a solid dough. If the mixture is too wet add a teaspoon of flour at a time until the dough has formed.

  6. Fold in chocolate chips (feel free to add extra).

  7. Roll dough into eight balls (a bit bigger than golf ball sized) and squash them down into thick discs. You can make them smaller, just decrease your cooking time to 9-12 minutes.

  8. Line the tray with your cookies, ensure they have an equal amount of space between them as they’ll expand when they cook.

  9. Bake for 12-15 minutes. The edges of the cookies should be golden brown. If the top looks a little pale, this means they’ll be quite soft. Cook for an additional 3-5 minutes if you'd like them a little more well-done.

  10. Remove from oven, allow to sit for 5-10 minutes before transferring to a cooling rack. This is the perfect time to round out your cookies if they look a little wonky. Grab a cup or a bowl that will cover the entire cookie, place it over it and gently wiggle the cup/bowl in a circular motion. This will round out the edges of your cookie.

  11. Once cooled, serve to your local wyvern (or family and friends).
